Flashback Friday - Awesome Blender Pancakes

Welcome to Flashback Fridays.  Every now and then -- on a Friday, obviously -- I'll re-post something I wrote way back when.

This post is from October 14, 2007.  These are the best pancakes I've ever tasted.  Your mileage may vary.

If you're a big breakfast eater, this pancake recipe will quickly become a favorite. And if you're like us and not really into the early morning meal, they might be what it takes to change your mind. They're the best pancakes we've ever eaten.


Whole Wheat Blender Pancakes

1 cup milk
3/4 cup wheat kernels (aka wheatberries)
2 eggs
2 Tablespoons honey or sugar
1/4 cup oil
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt

Put milk and wheat berries in blender. Blend on high for about 4 minutes. Add remaining ingredients and blend a few seconds until mixed. Batter will be thinner than most pancake batters. Pour batter onto lightly oiled, hot griddle or skillet. Serve with butter and syrup or honey.

Makes approx. ten 5-inch pancakes.

Annie!!!!!! Your post reminded me I never gave you the blender oatmeal pancake recipe. I will email you later with it okay? First since it is only 85F @ 7:00 a.m. I am off to clean the chicken coop and plant a markdown blueberry bush. I'll talk to you later!

My family LOVES pancakes...they could eat them morning, noon, and night!! These sound yummy!!! :)
