It's the last week of the month and I've come in way under budget on groceries, thanks to our well-stocked freezer and pantry and a few pizza mystery shops.
Here's what's this week looks like:
Sunday 1/25 - Rotini with Smoked Sausage and Tomato-Wine Sauce, Garlic Toast, Homemade Creamed Corn, Peas
This was originally on last week's menu, but didn't get made. The pasta recipe comes from Dinners for a Year and Beyond; the original recipe calls for chicken instead of sausage.
Monday 1/26 - Pigs in a Blanket, Macaroni and Cheese, Green Beans, Fruit Salad
This was also moved from last week's menu. I'll make the dough for the pigs' blankets and the mac-n-cheese from scratch.
Tuesday 1/27 - Quiche, Lettuce Salad, Fruit Salad
No recipe for the quiche; I'll just wing it.
Wednesday 1/28 - Taco Soup, Cornbread, Lettuce Salad
Again, no real recipe for the soup. There are hundreds of taco and/or tortilla soup recipes online; I'll just look at a few for inspiration, then start throwing things into the soup pot.
Thursday 1/29 - Leftover Taco Soup, Grilled Cheese Sandwiches
Friday 1/30 - Clean Out The Refrigerator Night
Saturday 1/31 - Snack Night: Sausage Pinwheels, Fried Green Pepper Rings, Deviled Eggs, Peaches
Some of these were on previous menus but didn't get made.
