Still working on using what we already have on hand this month. Here's what's in store for the week ahead:
Sunday 1/18 - Mystery shopping a late lunch of pizza buffet.
If we need something to eat later, it will just be whatever we find to snack on.
Monday 1/19 - Smothered Burgers, Mashed Potatoes, Peas, Corn
The burger recipe is from the website Full Bellies, Happy Kids!.
Tuesday 1/20 - Jack's Ranch Chicken, Chicken-flavored Rice, Mixed Vegetables, Apricot Halves
I found the chicken recipe at At Home With My Monkeys.
Wednesday 1/21 - Rotini with Smoked Sausage and Tomato-Wine Sauce, Garlic Toast, Homemade Creamed Corn, Peas
This pasta recipe comes from Dinners for a Year and Beyond; the original recipe calls for chicken instead of sausage.
Thursday 1/22 - Pigs in a Blanket, Macaroni and Cheese, Green Beans
I'll make the dough for the pigs' blankets and the mac-n-cheese from scratch.
Friday 1/23 - Clean Out The Refrigerator Night
If we need something more, I'll make Sausage Pinwheels and/or Fruit Salad
Saturday 1/24 - Carne de Porco a Alentejana (Pork & Clams), Home Fries, Asparagus
This recipe also comes from Full Bellies, Happy Kids!. I'm intrigued by all of Sandra's Portuguese recipes.
