Weekly Menu - 1/11 through 1/17

I'm continuing to try buy as little as possible this month and use things we have on hand in our pantry and freezer. Here's what's on deck for this week.

Sunday 1/11 - Chicken Stuffing Bundles with Gravy, Broccoli, Jell-O with Pineapple

The chicken bundles will be something of a cross between Sarah's Chicken Crescent Squares and Laura's Thanksgiving Bundles. The chicken will come from some meaty breast bones I saved and froze from a different meal. The crescent rolls are on hand because I had a few coupons and ended up overbuying before Christmas. (The temptation to overspend is one reason I don't do a great deal of couponing.) I have three tubes left that really should be eaten soon.

Monday 1/12 - Steaks (probably pan-fried), Beefy Noodles, Asparagus, Glazed Carrots

We actually have a lot of steaks on hand; over the summer we bought a beef package from a vendor going around our town. The beef is not the best we've ever had, but neither is it the worst. Shane haggled the price down to less than retail, so we have no regrets. However, I don't think we'll buy again. The "beefy noodles" dish is just Hamburger Helper made without meat.

Tuesday 1/13 - Fried Catfish Nuggets, Hushpuppies, Corn, Pickled Beets, Green Beans

Funny thing about this catfish. We had planned a fish-fry back fall. The fish fry didn't happen, but I did buy the fish. For some reason thought it would be frozen all in one chunk (like cod or whiting often is). Not wanting to thaw all of it out for a single meal, I kept putting off cooking it. Silly me, it's individually frozen nuggets. We'll be having it often for the next couple of months.

Wednesday 1/14 - Pasta with Marinara Sauce (no meat), Garlic Toast, Peas & Carrots, Applesauce

Thursday 1/15 - Coconut Shrimp, Veggie Fried Rice, Egg Rolls, Asparagus

In the interest of time and simplicity, the egg rolls will be store-bought. That's a shame; I have a recipe for egg rolls that are much better than any from the store, if I would just take time to make them.

Friday 1/16 - Clean Out the Refrigerator Night.

As always, if there aren't enough leftovers for a meal, we'll have sandwiches of some kind.

Saturday 1/17 - Out for Dinner

I'm mystery shopping a nice dinner out for two. (Kat will be with her mom that night.)

Oooo...I love asparagus!!! Nobody else here likes it, though, so we rarely have it. I strongly prefer fresh to frozen, but in a pinch, I will sometimes buy the frozen stuff. Sounds like a good menu. I have been trying to plan mine since last night and just CANNOT get it together!!!! :(

Shane and I love asparagus; Kat, not so much. This asparagus is some I bought fresh and froze myself. I'm hoping it's a little better than commercially frozen.

I'm still working on my menu plan for the week also. I hate planning it, but it does make it so much easier on me.

We also love asparagus, I buy fresh from a greenhouse on 58 during the season.

Is it the place just on the east side of Raymore across from the self-storage place. That's the only one I can think of on 58. Or is there some place closer to Pleasant Hill that I don't know about?

I always try to use stuff from the freezer too, then I get mad when my freezer's empty. "how the heck did that happen???" :P

annie yes it's the one across from the storage place. Right now I cant think of the name, but we've bought pumpkins for halloween there, trees, asparagus, etc. We love stopping by there.
