Cabbage-Jicama Cole Slaw


Have you tried jicama?  It's a root vegetable popular in Mexico and South America that has a texture that is similar to both raw potatoes and apples.  It's slight sweet and very crunchy.

It seems like I may have bought a jicama years ago, but if I did, I don't remember how (or even if) I prepared it.  I bought one a few weeks ago with the intention of making a cole-slaw type salad with it for Cinco de Mayo.

Well, here it is, Veinticinco de Mayo, and I've finally made the slaw. It was worth the wait!


Cabbage-Jicama Cole Slaw

3 cups coarsely shredded cabbage (I just cut it into thin strips with a knife)
3 cups shredded jicama (it's difficult to peel, but easy to shred with a hand held shredder)
1 large carrot, shredded
1/2 cup mayonnaise
1/3 cup sugar
1/4 cup milk
1/4 cup buttermilk (sub kefir, plain yogurt or thinned sour cream as desired)
1-1/2 Tablespoons white vinegar (I used rice wine vinegar)
1-1/2 Tablespoons lime juice (could use lemon juice, I used lime because it goes will with jicama)
1/2 teaspoon salt
1/4 teaspoon celery seed (I didn't have any; I reduced salt to 1/4 teaspoon, then used celery salt)
1/8 t. pepper

Combine cabbage, jicama and carrot in large bowl.  In small bowl, combine all remaining ingredients and whisk until smooth.  Pour over vegetables and stir to coat.  Chill before serving.

Makes 6-8 servings.

I am always eyeing the jicama in the store, but my efforts to include it in meals have been unappreciated. I might have to give this a try. Of course, I won't fess up to the mystery ingredient!

I've always looked at the jicama too but had no idea of how to use it. Thanks for the recommendation. Now if I can just remember to buy it on the next grocery trip!! Have a great day.

SonyaAnn: YOU can do it! You don't need Den...LOL!

Jinmo: I'm lucky that Shane isn't very picky. He'll try just about anything once, and usually ends up liking most things. Kat is moderately picky; I wish she liked more veggies.

Sheila: A common way to eat it is to just cut it into strips and dip into salad dressing or salsa. I like that it doesn't seem to turn dark after it's cut like an apple or potato will.
