Grilled Tuna Melts



These sandwiches were a nice change of pace from ordinary tuna salad sandwiches. There is no recipe; the idea was featured in a promo magazine my mom received from her local grocery store.

I used homemade Italian bread for these sandwiches, but any bread will work. My tuna salad filling (never the same twice) consisted of a can of albacore tuna, a can of chunk light tuna, some Miracle Whip, a couple of chopped boiled eggs, some chopped dill pickle, a little Dijon-style mustard, a pinch each of lemon pepper and onion powder, and about 4 slices of fried, drained and crumbled bacon.

I stacked the sandwiches like this: bread, Provolone cheese, tuna salad, thin slices of tomato, provolone cheese, bread.

Then I melted butter over medium-high heat in a skillet and grilled the sandwiches on each side. Flipping them was a little tricky, but it can be done. I cooked them until the cheese melted and the bread was golden brown.

We ate these with a variety of leftover vegetable side dishes from earlier in the week, but they'd taste great with fries, chips or potato salad as well.

Depending on the size of the bread you choose, two cans of tuna made into salad could make as many as 8 sandwiches.

365 Day Clutter Challenge - Days 8, 9, 10 & 11: 8 - Disposed of an expired prescription medication. 9 - Tossed 3 dishcloths that were looking very well used. 10 - Culled some mismatched coffee mugs and glasses from kitchen cabinets and placed in donation box. 11 - Went to a thrift store this morning and dropped off donations (1 box, 2 bags) that I've been gathering up for a few weeks.

You know, I've never had a tuna melt but I think I'd eat just about anything if it's grilled between two slices of bread with provelone and tomatoes.
