Weekly Menu Retrospective - 4/3 to 4/9

I'm a menu planner, but when I've tried to post my weekly menus here in the past, they weren't accurate because I often change things at the last minute. On the other hand, I really like being able to look back to see what we've eaten, what we loved, what we disliked, and most of all being able to link to the recipes on my menus that have come from other blogs. That's why I prefer to post my weekly menus after the fact.

Sunday, April 3 - Ham, Potato and Egg Skillet, Leftover Veggies

The night before we had gone to Five Guys Burgers and Fries and brought home a boatload of leftover fries.  I chopped up some of them and heated them in a skillet with some diced ham (and for my portion, also diced bell peppers and onions).  I put them on the plate and topped them with fried eggs over easy.  Very tasty!



Monday, April 4
- Chili, Crackers, Carrots with Dip, Cooked Apples

After a 90-degree Sunday, we had a 50-degree Monday.  Perfect for chili (although I love chili all year round...).



Tuesday, April 5
- Leftovers from the Ham/Potato/Egg Meal from Sunday.

Finally used the last of those Five Guys fries for tonight's meal.  Same meal as Sunday, only with a bit of fresh asparagus for me (Kat doesn't like asparagus...yet).



Wednesday, April 6
- Leftover Chili Meal from Monday.

Only one round of leftovers from this small batch of chili.



Thursday, April 7
- Turkey Smoked Sausage, Mac and Cheese (from a box), Green Beans (for Kat), Asparagus (for me), Cooked Apples.

No more leftovers in the fridge, so rather than cooking something elaborate, I threw this meal together.  Very mediocre meal.



Friday, April 8
- Leftovers from Thursday.

I love leftovers, but I seriously wasn't in the mood for this meal again.  It wasn't "nasty" or anything, but it was boring and I wanted something else.  Oh well, it needed to be eaten, so we ate it.



Saturday, April 9
- Chicken Tikka Masala, Brown Rice.

When my daughter, Jean, switched to a vegan diet, she gave me a seasoning packet for Chicken Tikka Masala.  That was quite a while ago, but I finally found an opportunity to use it (while I was home alone -- it's nothing Kat would eat, I'm sure).  It was good, but because I was so tired from working out in the yard and garden all day, I didn't even bother to heat a veggie to go with it.

Your Friday April 8th meal, we have that here too. Food is in the fridge, it is not really what you want, but eat it up!

love, LOVE what you do with leftover fries. I thought I was the only one to bring home leftover fries. I've only ever just heated them back up, as is. Thanks so much for the idea...and the ideas it also brings to mind.
