Weekly Menu Retrospective - 1/30 to 2/5

I'm a menu planner, but when I've tried to post my weekly menus here in the past, they weren't accurate because I often change things at the last minute. On the other hand, I really like being able to look back to see what we've eaten, what we loved, what we disliked, and most of all being able to link to the recipes on my menus that have come from other blogs. That's why I prefer to post my weekly menus after the fact.

**********

We had three snow days for Kat this past week and four snow days for Shane.  More people at home means more cooking.  Here's what I served last week:

Sunday, January 30 - Patty Melts with Cheddar and French Fried Onions, Fries and Tater Tots, Sauteed Apples, Salad with Homemade Ranch Dressing

It was warm enough to grill before the blizzard attacked, so we did.  There weren't enough of just fries or just tots to serve all three of us, so I cooked both.

Monday, January 31
- Fried Chicken, Annie's Party Potatoes, Peas, Green Beans, Sauteed Apples.

Shane requested fried chicken.  I think it was my best batch so far, and I think that was because I had messed around the night before and tried deep frying some bacon.  Crazy, huh? I know why the bacon was blah...because all the flavor went into the vat of peanut oil and then into the chicken!

Tuesday, February 1
- Homemade Ravioli, Homemade Pasta Sauce, Salad with Homemade Ranch Dressing, Corn, No-Knead Bread.

My first try at ravioli was a success.  I'll be making it again.

Wednesday,
February 2 - Crock Pot Pork Chops, Mashed Potatoes, Steamed Carrots, Green Beans Amandine, No-Knead Bread, Snow Ice Cream

We made two different batches of snow ice cream...this one from Paula Deen and this one from Tried and True Cooking with Heidi.  I liked Heidi's recipe better.

Thursday,
February 3 - Snacks and Leftovers

We went out for a Chinese buffet lunch, celebrating not only the Chinese New Year, but also the fact that we'd dug ourselves out of the blizzard.  We weren't very hungry for supper, so we just scrounged for whatever we could easily find.

Friday,
February 4 - Pork Stew/Soup, Honey-Moist Cornbread, Applesauce

This stew/soup is an old favorite of mine, but I forget about it and don't make it very often.  It's a nice treat when I do.

Saturday,
February 5 - Georgia Shrimp and Grits, Dilled Vegetable Salad.

I've been wanting to make this for a while.  With Kat at her mom's for the weekend, this was the perfect opportunity.

Thanks ladies!

Lisa B, it really wasn't that hard to do. Just time consuming.

McVal, I said something just like that to Shane. I told him that the week as a whole seemed to be one of our better ones, food-wise. Everything seemed to just hit the spot.
