Quick & Easy Creamed Spinach

I've tried several recipes for creamed spinach in the past, but this version that I tossed together is the first one to live up to my expectations. It's quick and easy, and I think it could be easily jazzed up with some hot sauce, more sour cream or some Cajun spices to make a nice warm spinach dip.

Quick & Easy Creamed Spinach

1 12-oz. package of steamer version chopped spinach, cooked but NOT drained*
1 8-oz. package cream cheese, at room temperature
1/2 cup shredded mozzarella cheese
2 Tablespoons sour cream
3/4 teaspoon Cavender's Greek Seasoning or seasoned salt
pinch of dry thyme leaves

Cook spinach in microwave per package directions. Do not drain. Empty contents of package into large microwave safe bowl.

Add remaining ingredients. Microwave for 30 seconds, then stir. Continue microwaving in 30 second increments and stirring, until all ingredients are combined well.

Season with pepper and additional salt if desired.

Makes about 3 cups.

I made one purchase yesterday.  I found a $1.00 coupon on Sunday's paper for Cuties Clementines and they were still on sale from last Wednesday's grocery ad, so I picked up another 5-pound box of them.

Groceries* Purchased 12/6:  $5.40
Total Groceries* Purchases for December: $74.83
Money Spent on Dining Out: $15.97

* Edible items only.

YUM!! I think we will love this one--we love all things spinach!! Thanks for sharing. I have everything on hand but the steamer bag of frozen spinach. I do have regular frozen spinach though. I may have to give this a try this week.

Thanks for stopping by! I think you could use regular frozen spinach. I just prefer the steamer kind because it has just enough liquid and you don't have to drain it or squeeze it out.

Will have to try this since I love a good creamed spinach.
I've tried the one at Lone Star Steakhouse but it didn't taste so good...I think their recipe is just spinach and cheese....not much of a recipe really.lol The boxed one that Green Giant sells is ok but a bit salty to my taste.

And cream cheese is on sale this week...yippee!
