I'm a menu planner, but when I've tried to post my weekly menus here in the past, they weren't accurate because I often change things at the last minute. On the other hand, I really like being able to look back to see what we've eaten, what we loved, what we disliked, and most of all being able to link to the recipes on my menus that have come from other blogs. That's why I prefer to post my weekly menus after the fact.
Sunday, November 7 - Miscellaneous Leftovers
We had a buffet-style meal of last week's beef tips, noodles, mac & cheese, green beans, 7-Layer salad and threw in a few slices of tomato for good measure.
Monday, November 8 - Hot Chicken Sandwiches on toast with Mashed Potatoes and Gravy, Broccoli Casserole, Steamed Corn
I used the leftovers of last week's Beer Can Chicken to make these open-face, diner-style sandwiches. Have any of you tried The Allen's Steam Supreme frozen corn? We think it's the best frozen corn we've had. It tastes almost as good as fresh corn on the cob.
Tuesday, November 9 - Upside Down Pizza Casserole, Best-Ever Pasta Salad, Corn, Impromptu Chocolate Dessert
The pasta salad was the star of this meal, in my opinion. For dessert, I broke up the last few brownies from a batch I'd made a few days earlier, and built a trifle of sorts using chocolate pudding (from a mix) and real whipped cream. Nostalgic and good!
Wednesday, November 10 - Breaded Eggplant Slices, Leftovers from Tuesday's meal.
I cooked the last of the eggplants from our garden, making something kind of like Eggplant Parmesan. I used the lemon pepper panko crumbs from my last giveaway to bread them before frying. I ate mine with just a drizzle of ranch dressing, while Shane ate his with the more traditional marinara sauce. I'm already looking forward to next year's garden!
Thursday, November 11 - Homemade "TV Dinners"
Remember when frozen meals were called TV Dinners? I threw my back out Thursday while loading groceries into the van. I went to the chiropractor immediately after it happened but it was still sore that night. It was so nice to just pull a few homemade meals out of the freezer. I had roast beef with mashed potatoes, Kat had chicken and gravy over mashed potatoes and Shane had Beef Tips with Gravy on Noodles. Shane heated some canned green beans and we called it good enough.
Friday, November 12 - Cajun White Beans with Rice, Bacon-Onion-Cheddar Biscuits, Homemade Applesauce
I had been waiting for this meal all week; it kept getting postponed for one reason or another. I love Cajun flavors and wasn't disappointed with this dish.
Saturday, November 13 - Beef Stew, Cornbread, Pan-fried Venison Medallions, Yellow Cake with Whipped Cream and Strawberries
Shane shot the first deer yesterday on our friend John's land, and it's their tradition to cook up the backstrap (the venison tenderloin) of the first deer of the season for that night's supper. John's wife, Trish, made the rest of the meal. It was all delicious.
