Weekly Menu Retrospective - 10/31 to 11/6

I'm a menu planner, but when I've tried to post my weekly menus here in the past, they weren't accurate because I often change things at the last minute. On the other hand, I really like being able to look back to see what we've eaten, what we loved, what we disliked, and most of all being able to link to the recipes on my menus that have come from other blogs. That's why I prefer to post my weekly menus after the fact.

Yay me! I'm finally back in cooking mode!  We didn't go out to eat or eat from boxes or mixes at all this week.  It's been quite a while since I could say that.



Sunday, October 31 - Chicken and Dumpling Bake, Asparagus, Green Beans, Homemade Rolls

Always a favorite and definitely the most-repeated dish in my repertoire this year.

Monday, November 1 - Bacon Cheeseburger Roll-Up, Tater Tots, Grapes, Corn

Looks boring, tastes great.


Tuesday, November 2
- Chorizo and Hashbrown Enchiladas, Grapes

These were very tasty and filling.

Wednesday, November 3
- Leftovers.

There were plenty of enchiladas left for a second meal.

Thursday, November 4 - Beer Can Chicken, Homemade Mac & Cheese, Peas and Carrots, Homemade Applesauce

Beer Can Chicken is always good.  If you don't like cooking with alcohol, try lemon-lime soda, chicken broth, or apple juice instead.

Friday, November 5 - Beef Tips with Gravy, Noodles, 7-Layer Salad, Green Beans, Homemade Rolls

We had our friends John and Trish  (and their kids) over for dinner for the first time, so I wanted to make foods I knew were no-fail for me.  This particular 7-Layer salad has lettuce, green onion, celery, bacon, peas, tomato and Ranch dressing.  Trish brought cupcakes for dessert.

Saturday, November 6 - Spicy Italian Beef Sandwiches on Homemade Rolls, Leftover Homemade Mac & Cheese, Leftover 7-Layer Salad

Kat isn't always up for spicy food, so I made this while she was staying with her mom this weekend.  There are lots of leftovers for lunches and possible beef burritos.

I need to have some beef and noodles this week. I've been wanting them for a long time.

Have you heard about any cookie exchanges for this year in our areas?

Two different friends have talked about having cookie exchanges. I don't have details yet, though. If they do, would you like for me to see if I can bring a guest?
