Whole Wheat Blender Pancakes

If you're a big breakfast eater, this pancake recipe will quickly become a favorite. If you're like us and are not really into the early morning meal, they might be what it takes to change your mind. They're the best pancakes we've ever eaten.  They'll make you want to drop that box of pancake mix directly into the trash.


Whole Wheat Blender Pancakes

1 cup milk
3/4 cup whole wheat kernels (aka wheatberries)
2 eggs
2 Tablespoons honey or sugar
1/4 cup oil
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt

Put milk and wheat berries in blender. Blend on high for about 4 minutes. Add remaining ingredients and blend a few seconds until mixed. Batter will be thinner than most pancake batters. Pour batter onto lightly oiled, hot griddle or skillet. Serve with butter and syrup or honey.

Makes approx. ten 5-inch pancakes.

Annie- Where do you get your wheat berries and if you don't mind sharing... how much are they? I'm looking for a new source and would like to buy in bulk. You can email me if you prefer. Thanks!

P.S. I have a blender pancake recipe that uses oatmeal and no flour. It is amazing, so I will definitely try this one.

I get mine at either Whole Foods or a similar but locally owned store called Nature's Pantry. Both of those stores sell wheat berries from their bulk bins but I can't remember how much they are.

If you are wanting to get large quantities, you might look into Azure Standard or other places like that.

Also, will you share your oatmeal pancake recipe? Please?

This looks yummy. My pancakes just don't turn out so great. They are ugly but edible.
