Weekly Menu Retrospective - 10/3 to 10/9

I'm a menu planner, but when I've tried to post my weekly menus here in the past, they weren't accurate because I often change things at the last minute. On the other hand, I really like being able to look back to see what we've eaten, what we loved, what we disliked, and most of all being able to link to the recipes on my menus that have come from other blogs.  That's why I prefer to post my weekly menus after the fact.


Sunday, October 3 - Grilled Pork Tenderloin and Peaches, Roasted Herb Potatoes, Green Beans, Homemade Dinner Rolls (from the freezer). 

This meal was surprisingly delicious, although I don't usually like "meat with sweet" dishes.


Monday, October 4 - Fish Stick Enchiladas, Green Chile Rice, Corn, Lettuce Salad. 

I know fish sticks aren't gourmet food and aren't healthy, but I do enjoy fish tacos, so for some reason this sounded like a tasty idea to me.  It was "just ok", though.  While the leftovers will be eaten without fuss, it's not something I'll bother making again.

Tuesday, October 5 - Teriyaki Pork, Sweet & Sour Pork, Steamed Brown Rice, Lettuce Salad.  Baking:  an adapted version of Ginger Cookies.

This wasn't originally in the plan, but there was enough of Sunday's pork tenderloin left for another meal.  In the fridge I found both homemade sweet and sour sauce and homemade teriyaki sauce.  I divided the pork and sauced it accordingly, adding some grilled bell pepper and onion chunks to the adult portions.  It turned out great for impromptu Asian food.

Wednesday, October 5 - Stuffed Bell Peppers (a leftover enchilada for Kat), Corn, Lettuce Salad, Cottage Cheese, Guacamole with Tortilla Chips. 

This meal included the last of the large peppers from our garden.  I never use a recipe for the filling.  This time I used ground turkey seasoned with some homemade salsa and a small amount of Ro-Tel tomatoes and made Mexican-style stuffed peppers.

Thursday, October 7 - Leftover Fish Enchiladas, Leftover Stuffed Peppers, Lettuce Salad, Sliced Kiwifruit, Tortilla Chips. 

This is another meal that wasn't in the original plan for this week.  Between leftover enchiladas and leftover stuffed peppers, there was enough to make a meal for all of us.

Friday, October 8 - Easiest Egg Bake, Shredded Hash Browns, Sliced Kiwifruit, Sauteed Cabbage, Toasted Homemade Bread with Butter.

Quick and easy Friday night supper.


Saturday, October 9
- Flounder Fillets with Cajun Shrimp Sauce, Brown Rice, Mixed Veggies (Cauliflower, Carrots and Broccoli). 

Kat doesn't care for shrimp, so I made this while she was at her mom's last night.  I didn't use a recipe, but it was kind of like this one.

I for one LOVE pork with fruity flavors! That would explain my early fascination with sweet & sour pork as a child.lol My mom always served applesauce with pork chops.
So I decided a couple of years back to make a gravy of sorts out of the pan drippings/deglazing and add apricot. The family raved. So I tried plum next and they loved that as well. I guess I'll have to try peach too.

I love fruit on the side, but I guess I'm something of a purist when it comes to meat. I usually like to eat meat without any sauces. My exceptions are vinegar on fish, the occasional dip of a chicken strip into Ranch dressing, fully-loaded burgers and gravy of any kind. Mmmm...gravy.

Roasted Herb Potatoes sounds amazing! I really want to live with you and I promise not to bring any road kill.
