Weekly Manu Retrospective - 10/17 to 10/23

I'm a menu planner, but when I've tried to post my weekly menus here in the past, they weren't accurate because I often change things at the last minute. On the other hand, I really like being able to look back to see what we've eaten, what we loved, what we disliked, and most of all being able to link to the recipes on my menus that have come from other blogs. That's why I prefer to post my weekly menus after the fact.

Sunday, October 17 - Kielbasa and Cabbage Soup, Honey Moist Cornbread, Peach Galette

I threw this soup together from recipe, but made so many changes that it was not really like the recipe at all.  But it was good.  Peach Galette (a sort of one crust pie or tart) is a quick dessert to make for a small family.

Monday, October 18 - Cream Cheese Bacon Chicken, Baked Shredded Carrots, Corn

This was the only real cooking I did this past week, IMO. It was ohso good and ohso fattening and made up for all the non-cooking I did the rest of the week.

Tuesday, October 19 - Pasta with Marinara Sauce, Garlic Toast, Wintermix Veggies

This was a super easy meal.  I cooked whole wheat pasta while heating up store-bought sauce.  The garlic toast was from homemade bread.  If you don't already know, wintermix veggies is a frozen mix of cauliflower, broccoli and carrots.

Wednesday, October 20 - Corn and Green Chile Chowder, "Bun-On" Hot Dogs, Wintermix Veggies

This impromptu soup turned out great.  Bun-On Hot Dogs are similar to Pigs In a Blanket, except that they are entirely enclosed in homemade bread dough.

Thursday, October 21 - Miscellaneous Leftovers

Thursday is shopping and errands day, so I try to have leftovers most weeks.  We had two kinds of soup and I made some egg salad sandwiches to go with the soup.

Friday, October 22Frozen Pizza, French Fries, Onion Rings

I was enlisted to help my daughter Jean get to some appointments throughout the day, and then we took Kat to Trunk or Treat that evening.  I was unprepared, so I just pulled some things out of the freezer.

Saturday, October 23 - Garlic Chicken over Rice

While moving Jean and M. into their new home, they bought our lunch.  We had leftover fried rice, so on the way home from the move, we stopped at Aldi and bought their heat-and-eat Garlic Chicken to go with it.  I didn't even fix sides.  It was all I could do to press the buttons on the microwave.

Want some squirrel to add to your menu? Taste like chicken!
Grab a jar of the red cabbage at Aldi's next time. All you do is heat it up. We love it. It's with their German food and it does have apples in it. However you have to read the label to know that, can't taste them.
Shh!! we are off tomorrow with the camper for 4 days. See ya when we return.

Your menu retrospective sounds wonderful. I've copied the cream cheese bacon chicken recipe. I know it will be a hit here!! The corn and green chile chowder looks wonderful too but alas, I can't have corn!! I wonder how it would be if I left it out. Have a wonderful week.

I'll eat the squirrel, no problem. :)

I love Aldi. Do they have the red cabbage available all the time? Right now our store has a huge display of foods for Italian meals.

Have fun camping!!

Sheila, I don't think you'll miss the corn if you leave it out. I almost didn't add it because the original recipe called for canned corn, which I don't eat. I used frozen instead. If I were you, I'd just add a little more 'tater. :)
