Tuna Starfish

This is a fun recipe for kids.  We all liked them a lot; I made a double batch and there were only four of them leftover!  This came from a clipped recipe I had in my file; I'm not sure of the original source.  I've had it for a while, though...it calls for tuna in 6-ounce cans, and most tuna I see now comes in 5-ounce cans.

While these were fun to make and eat, they were time-consuming, so next time I'll shape them into simple round patties.


Tuna Starfish

1 egg
1 Tablespoon seafood seasoning (such as Old Bay)
1 cup crushed cheese-flavored crackers
1/4 cup milk
Dash hot pepper sauce
Dash Worcestershire sauce
2 cans (6 ounces each) tuna, drained
1/4 cup finely diced red pepper (I used jarred pimientos)
Olive oil

Stir together egg, seafood seasoning, crackers, milk, hot sauce and Worcestershire sauce.  Add tuna and bell pepper, and mix well.  Let sit for about 5 minutes.

Using a large scoop or spoon, spoon about 1/2 cup of mixture onto a piece of parchment paper or foil.  Flatten to about 1/2" thick, then cut using a 3-inch cookie cutter.   Return excess tuna mixture to bowl and repeat until all of the tuna has been shaped.

Heat a small amount of oil in a large skillet and place several starfish in pan at a time.  Cook 2 to 3 minutes, or until lightly brown, then flip.  Cook an addition 2 to 3 minutes or until firm and lightly browned.  Repeat with remaining starfish, adding small amounts of oil as needed.

Keep starfish warm until ready to serve. 
Makes 4 servings.

So do you eat them plain or put them on a bun?

Shelli: We ate them plain. I served potato salad, lettuce salad and sauteed zucchini with them. If they were made into larger patties, though, I think they'd be fine on a bun.

Hey this is like a tuna crabcake.lol
I bet if I told him it was a crabcake and b/c of the cheese cracker filler, #2 son might actually take a bite before he realized it was not crab but he might actually like it!
Did that make any sense?....it did in my head but on the screen it doesn't look so coherent.lol
If I can find some free cheese crackers deals I might have to try this as I have lots of tuna hanging out in the stockpile.
