Welsh Breakfast Cakes


Last Sunday I decided to make these little cakes for a late breakfast/brunch.  They are a yummy cross between a biscuit, a pancake and shortbread cookie.  I sprinkled them with cinnamon sugar as they came out of the pan, then Kat and I ate them with a little butter, while Shane had his butter-free.  I tried one with a little drizzle of pancake syrup.  I didn't like it much that way, but maybe you will.

I found the recipe at My Kitchen Cafe.  Other than reducing everything by half, I made them exactly according to the recipe.  Give them a try if you want something a little different for breakfast or brunch.

SonyaAnn: I'm not sure where I got that plate, but it's the only one I have. It has more colored rings in the middle (covered by the cakes). My everyday plates are a mixed set of Corelle that came from my MIL and my step-MIL. Bet they'd love that if they knew I combined their sets.

We're having a boatload of company this weekend. I should run this past my hubby and see if he wants to do this for them. Looks so good!

These 'cakes' are commonly sold in the area where I grew up - Scranton, PA. Lard is common but I haven't tried that. I also don't dip mine in sugar which they often do. I don't find the extra sweetness necessary.

We call these Welsh Cookies here. You have to make them with the currants or raisins....and you don't need to drown them in syrup or anything.
