Strawberry Oat Cereal...By Accident


Do any of you remember the painter, Bob Ross, who would say "We don't make mistakes, we just have happy little accidents"? Well, I had a happy accident of sorts over the weekend...and I plan on making the mistake again!

Look at this wonderful cereal. It's all oats and strawberry goodness, warmed a little and topped with a little milk or half-and-half. It's hard to believe it was unintentional, isn't it?

Fellow blogger Leanne posted a recipe a week or so ago for Raspberry and Coconut Breakfast Bars. I decided to give it a try, using strawberry preserves.

Agreeing that strawberry preserves might make an overly sweet bar, I followed Leanne's suggestion to reduce the brown sugar to 3/4 cup. I also used old-fashioned oats instead of the quick-cooking kind in Leanne's recipe. Otherwise, I followed the recipe to the letter.

After baking, the mixture would not hold together. I didn't end up with breakfast bars at all. What I did end up with was the most amazing strawberry cereal.

Crumbled into a bowl, heated a bit and topped with a little milk, this is so, so good! Even crumbled into a bowl cold, it's one of the best cereals I've eaten. I'm not a cold cereal fan, so that says a lot.

I still haven't decided if it was the change in oatmeal or the reduced sugar that kept the bars from firming up, or if maybe my oven temperature is off on the cool side. I'll be trying Leanne's recipe again to see if I can figure out where I went wrong. But I'm keeping my version, too, so I can remember where I went right.

I'm glad the recipe wasn't a complete wash:) Maybe it does just need a bit longer for bars. The other thing I was thinking is did you use homemade jam. I used shop bought which is bound to be full to the eye teeth with setting agents and stabilisers and who knows what all and maybe they're helping the bars set.

Leanne: It was anything but a wash. Really, it's that good as cereal. :) I used store-bought preserves; they were soft, but not thin or runny. I should probably make your recipe as written and see if it works, then go from there.

SonyaAnn: I bet you'll like it, but if you try it (with my changes) and you get bars, then let me know...LOL!

Yeah our house knows Bob Ross well. Husband paints using his techniques.

The cereal looks and sounds yummy.

Lisa: I used to love to watch him paint on Saturday afternoons. He made it look so easy! I'm sure reruns are still on PBS sometimes, but I rarely have the TV on during the day anymore.

I found it using my recipe search in my sidebar. Thankfully, it was there...I really need to get up to date with my recipes listed there. Guess what I might do while I'm recovering from surgery. ;)
