Spicy Orange Greens


We have been enjoying collard greens, Swiss chard, radish greens and a little bit of spinach from our garden. My favorite way to prepare them is to saute them in a little bacon fat, then add some salt, pepper and a little water to steam them until tender.

Inspired by something I saw on a gardening forum, I came up with the idea to saute the greens in olive oil, toss in some dried red pepper flakes, some salt and pepper and a little bit of orange juice. I used thawed orange juice concentrate (not reconstituted), but I think it would work well with prepared orange juice, too.

The pepper flakes add some kick and the juice adds a nice sweet flavor, especially to greens that are a little on the bitter side.

This sound GOOD!! I love any kind of greens. Alas, Hubby only like spinach. I think I will try this with some spinach.

This sounds good. I wish I had some greens to try it. Grated orange peel on top or in it would look good, too.
