Baking Day

Once upon a time, I baked almost all of our bread. Then we decided to buy this house and my bread baking fell by the wayside as I packed the old house, cleaned and painted the new house, moved to the new house, unpacked, moved Kat here part-time, moved Kat here full-time, etc., etc.

I've decided that after three years, it's time for me to try to get back in the habit of baking our bread, so I spent several hours yesterday baking what we will need to get us through the week.

I baked a pan of rolls to be used as buns for BBQ pork sandwiches. They are made from a recipe I found at A Feast For The Eyes.


I cooked a dozen flat breads to be used for Monterrey Chicken sandwiches.


I baked a large loaf of bread for slicing, toasting or whatever else we need.


I also baked these chocolate sandwich cookies. I found the recipe at Tried-and-True Cooking with Heidi. I added cherry drink syrup (the kind for cappuccino or soda) to the filling for about 1/3 of these cookies.

I'd love to know how you make your flatbreads. I haven't tried to make those, but want to do so. I need to buy a large loaf pan for sandwich bread. The smaller loaves just don't last long with 5 of us!

Flat breads are super easy. I used the same recipe as for the rolls. After the first rise, I punched the dough down, kneaded it a little, then divided it into twelve pieces. I flattened them out on the counter using just my hands and a little cooking spray if they got sticky. Then I cooked them in a dry skillet over medium-high heat for 2-3 minutes each side or until they got a few brown spots on them. That's it!

My pullman loaf pans were a Christmas gift. I'm pretty sure the came from Ace Hardware, but I haven't seen any there for a while. They were made by Chicago Metallic.

I wish I was more motivated to cook my own bread. Yours looks beautiful. I can't wait to try out the flat bread. I've never tried to make it before. I'm glad you enjoy the cookies :)

Whoa thats a big loaf of bread. I'm not even sure I could get a pan as big as that here, but I'll have to look now, it does get a bit tedius baking three and four loaves a week.
