It's been another busy weekend here. We are done with most of our planting now. All that's left is a few herbs to be transplanted to larger pots and a few perennial flowers.
Once again, the week ahead will be busy. Tonight I'll be frosting and decorating two dozen cupcakes that I baked earlier today. A dozen will stay here, and the rest will go to Kat's school for Staff Appreciation Day tomorrow.
I have a not-very-authentic Mexican meal planned for Tuesday in honor of Cinco de Mayo. I've been craving plain and simple crunch tacos, so tacos it will be. On Friday I'll be one of the chaperones on a trip to the zoo with the Kindergartners in Kat's school. I'm going to be sure to plan leftovers for that night; I'm sure I'll be too tired to cook anything.

I plan to fry the taco shells and make the salsa and pintos myself, but I'm going to use store-bought queso sauce for the nachos.Wednesday, 5/6 - Turkey Pot Pie with Biscuit Topping, Lettuce Salad, Peach Slices and/or Grapes
I'll be using another container of the cooked turkey I have in the freezer for this pie.Thursday, 5/7 - Pork in Sour Cream Sauce, Rice, Green Beans, Peas
Friday, 5/8 - Leftovers of Wednesday's Turkey Pot Pie meal.
Saturday, 5/9 - Busy Day Baked Fish, Herbed Tomatoes and Green Beans, Broccoli and Rice Casserole

Yep, that is seriously good pork piccata!!!! :) I haven't done my menu plan for the week - sick kiddo and I think sick me, too. I'll figure out something!
