Herbed Green Beans and Tomatoes

I liked green beans as a child, but for most of my adult life, I could take 'em or leave 'em. Lately, I've been trying a lot new recipes and I'm finding green beans are a favorite again.

This recipe has a fresh taste with just a hint of Italian flavor. I picked it up from an issue of Taste of Home, but saw the very same recipe in a cookbook from Costco. Instead of regular fresh or frozen green beans, I used the thinner haricot verts.

Herbed Green Beans and Tomatoes

3 green onions, sliced
2 cloves garlic, minced
2 Tablespoons olive oil
1 pound fresh or frozen green beans
1/4 teaspoon dried oregano leaves
1/4 teaspoon dried basil leaves
2-3 medium Roma tomatoes, diced
salt and pepper to taste

Saute onion and garlic in olive oil until tender. Add green beans, cover, and cook over medium-low heat until just tender, 6-8 minutes.

Stir in oregano, basil, tomato, salt and pepper. Heat through and serve.

Makes 6-8 servings.

One of my favs, too. Green beans ROCK when they're cooked with garlic.

Gay: My mom always made them the same way, out of the can and cooked for too long, probably. Although I'll always like them that way, I'm finding all kinds of new ways to eat them. :)

Those look SO NUMMERS!!! If only I didn't look at recipes with a 'fewer ingredients the better' kinda mind.

Tug: It is hard to get motivated to cook for just one or two. I remember those days from my single mom-hood.
