Weekly Menu - May 10 through May 16

This week's meal plan is no plan at all. It's time again to clean out the freezers and pantry and use up things that have been in there for a while.

I know we have convenience foods like corn dogs, spicy chicken strips, tuna and Tuna Helper, and boxed stuffing, as well as leftover (frozen) potato and smoked sausage casserole and four leftover turkey enchiladas. Not to mention the makings for a pot of "clean out the freezer" soup or stew. I'm sure there are more odds and ends than that; I'm not sure how it will all come together. I suspect there will be nights when we don't all eat the same meal.

By the end of the week I hope we have most of the odds and ends consumed. If we need a newly-cooked meal to round out the week, I'll make a pasta casserole or open-faced hot turkey sandwiches with mashed potatoes.

Next week's menu should look more structured; I'll be hanging loose 'til then.

I love how you do your meal planning; I need to definitely start doing that; it would make my life so much easier! I am going to do what you are doing this week: clean out the freezer and use up what is in there. It'll be interesting to see what I find and what I can creatively make with all of it! Have a very wonderful day :)

Odds and ends can end up being the best meals!

A.Marie: I think meal planning is one of the best ways to stay organized and keep costs down. Thanks for your comment!

Heidi: Thanks for stopping by. Some of our meals were "interesting" this week, but some ended up being pretty good, too.
