Taco Soup

Here's a soup I put together a while back. I just winged it and it turned out really good. Fortunately, I wrote down the ingredients as I added them.

It's great with cheese quesadillas on the side.

Annie's Taco Soup

4 cups chicken broth
3/4 cup diced onion
3/4 cup diced red and/or green bell pepper
1 package taco seasoning
1/2-1 cup frozen corn
1 cup shredded cooked chicken
1 cup diced cooked ham
1 jar diced tomatoes (mine had garlic, basil and oregano in them)
1 cup cooked rice
3 - 4 cups cooked red beans, drained
minced fresh cilantro, to taste

Combine all ingredients and bring to a boil. Reduce heat and simmer for 30 minutes or more, adding additional water if necessary.

Makes approximately 8 servings.
