A Good Day for Cookies

So, what do you do on a cold day in July? Bake cookies!

The weather was unseasonably and unexpectedly cool here today, with most of the day hovering around the mid 60s, so we turned off the A/C, opened up all the windows, fired up the oven and made these peanut butter-oatmeal-M&M cookies.

I found the recipe at allrecipes.com. I subbed in the M&Ms because I could.

Outrageous Chocolate Chip Cookies

1/2 cup butter
1/2 cup white sugar
1/3 cup brown sugar
1/2 cup peanut butter
1/2 teaspoon vanilla
1 egg
1 cup flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup oats
1 cup semisweet chocolate chips

Heat oven to 350°F.

In a medium bowl, cream together the butter, white sugar and brown sugar until smooth. Stir in the peanut butter, vanilla and egg until well blended. Combine the flour, baking soda and salt; stir into the batter just until moistened. Mix in the oats and chocolate chips until evenly distributed. Drop by tablespoonfuls onto lightly greased (are parchment lined) cookie sheets.

Bake for 10-12 minutes, until the edges start to brown. Cool on cookie sheets for about 5 minutes before transferring to wire racks to cool completely.

Makes about 3-1/2 doz.
