Lunchbox Cereal Treats


Here is a nice change of pace from crispy rice treats. Because it's made with either regular or honey-nut toasted oat cereal (Cheerios) and peanut butter, it might be just a tiny bit healthier. These are rich, so I cut them into 48 small bars. The recipe, which is from a Pillsbury recipe booklet called Fast Fresh Meals, says it makes 36 bars.


Lunchbox Cereal Treats

1 cup light corn syrup
1 cup sugar
1 cup peanut butter (creamy or chunky)
6 cups toasted oat cereal (regular or honey-nut)
1 12-oz. package (2 cups) semi-sweet chocolate chips

Lightly grease 13 x 9-inch pan. In large saucepan, combine corn syrup and sugar. Bring to a boil, stirring constantly, until sugar is dissolved*; remove from heat. Stir in peanut butter until mixture is smooth. Add cereal; mix well. Immediately press into greased pan.

Place chocolate chips in a 4-cup glass measuring cup and microwave for 3 to 5 minutes at 50% power, stirring once halfway through cooking time. Stir again until smooth; spread evenly over cereal mixture.

Cool completely or until chocolate is set. Cut into bars.

God, those things look great.

Alton Brown did a show last night on healthy energy bars and such. He did some rice crispy treats that looked pretty good.

Ajooja: They're a big hit with Shane and Kat, who both like peanut butter a lot.

I don't watch Food Network as much as I thought I would, but I think Alton Brown is probably my favorite.
