I'm a big fan of meatloaf, and it's not often I try a new meatloaf recipe that I don't like. But this one, I really like. Kat loved, even with the layer of spinach in the middle!
It's based on THIS RECIPE from Full Bellies, Happy Kids. I'm sure the original recipe is great, but I made some changes simply because I didn't have identical ingredients on hand. Check out the recipe Sandra posted, then come back and take a look at mine. Some day, I'm sure I'll try the original, too.
Stuffed Meatloaf
2 cloves garlic, minced
several leaves of fresh baby spinach
1/4 cup chili sauce
1/4 cup steak sauce (A-1 type)
1 to 1-1/2 cups shredded mozzarella cheese, divided
1 lb ground turkey
1 lb ground beef
2 eggs, lightly beaten
½ cup panko bread crumbs
1/2 teaspoon dried basil leaves
1/2 teaspoon dried oregano leaves
1/4 tsp salt
Preheat oven to 375 degrees.
In a large bowl, mix together turkey, beef, eggs, panko crumbs, basil, oregano and salt.
In a small bowl, combine the chili sauce and steak sauce.
Spoon half of meat mixture onto a greased baking pan. Flatten and smooth out.
Top with half of the sauce mixture, enough spinach leaves to make a single layer and the shredded cheese.
Top with remaining meat, flatten again and then go around the edges and seal, pulling in the loaf away from the sides of the pan.
Spread the remaining sauce mixture on top.
Bake for about an hour or until meat registers at 170 degrees.
Let sit for 5 to 10 minutes before slicing.
Enjoy with your favorite potatoes, rice or pasta side dish.
