Annie's Party Potatoes

I guess these could be called Blizzard Potatoes this time. There's definitely not a party going on here, but these potatoes are good anytime.




Annie's Party Potatoes

1-1/2 cups sour cream
1 envelope Ranch dressing mix (can use less than a full packet if desired)
1/2 stick butter
1/2 teaspoon seasoned salt
2 to 3 pounds russet potatoes
1 c. shredded cheese of your choice (I used co-jack)

Heat oven to 350°F.

Combine sour cream and Ranch dressing mix. Stir well; refrigerate.

Peel potatoes if desired, then cube. In a large bowl, melt butter and stir in seasoned salt. Stir in potatoes until coated. Place in a 2-quart Pyrex casserole dish. Cover with foil and bake for 45 minutes.

Remove dish from oven and uncover. Spread sour cream Ranch mixture over potatoes and top with shredded cheese. Bake, uncovered, for 15 additional minutes.

Makes 4 to 6 servings.
