For those of you who made a New Year's Resolution to lose weight -- bwahahaha! No, seriously, I apologize -- bwahahaha! Here's the recipe for the sweet potato pie I made for New Year's Day.
Sweet Potato Pie
1/4 cup butter, softened
1 cup cooked sweet potato, mashed
1 cup sugar
1/2 cup evaporated milk
1/2 teaspoon vanilla extract
3/4 teaspoon cinnamon
1/8 teaspoon salt
1/2 teaspoon nutmeg
1-1/2 teaspoons lemon juice
homemade, refrigerated or frozen crust for one pie
Heat oven to 375°F. Cream together the butter, sugar and sweet potato. Add cinnamon, salt and nutmeg. Beat in eggs and vanilla. Add evaporated milk and mix until well combined. Add lemon juice last.
Pour into pie shell. Bake for one hour or until knife inserted near center comes out clean.
Makes 1 pie.
