Weekly Menu Restrospective - 11/28 to 12/4

I'm a menu planner, but when I've tried to post my weekly menus here in the past, they weren't accurate because I often change things at the last minute. On the other hand, I really like being able to look back to see what we've eaten, what we loved, what we disliked, and most of all being able to link to the recipes on my menus that have come from other blogs. That's why I prefer to post my weekly menus after the fact.

Sunday, November 28 - Grilled Cheeseburgers, Potato Chips, Peaches

We needed a break from the turkey dishes.

Monday, November 29 - Impromptu Turkey Casserole, Salad, Cole Slaw, Pumpkin Pie

I grabbed some Thanksgiving leftovers for this casserole.  In a dish I layered stuffing, corn, shredded cooked turkey and cooked macaroni, then poured plenty of gravy over all.  Covered it and baked it until it was heated through.  It was kind of like a pasta-helper dish, but with a fresher, homemade taste.

Tuesday, November 30 - Chicken (Turkey) Cakes with Creole Sauce, Mac & Cheese from a box, Peas, Corn


This was a good recipe to use up the last of our Thanksgiving leftovers.

Wednesday, December 1 - Deep Fried Venison Fingers, Risotto, Baked Acorn Squash with Butter, Brown Sugar and Cinnamon, Corn


So far, we enjoyed this the best of the venison dishes I've made lately.

Thursday, December 2 - Oven Barbecued Pork Loin Chops, Pan-Fried Potatoes, Carrot Sticks with Ranch Dip, Mixed Vegetables

We hadn't had pork for a while, so this really hit the spot.

Friday, December 3 - Crowd Pleaser Chicken, Deviled Eggs, Scalloped Potatoes, Green Beans


I've had this chicken recipe on my menu for months, but for one reason or another, it would get replaced by a different meal.  I'm really sorry now that I kept putting it off.  This is one of the best baked chicken recipes I've tried!

Saturday, December 4 - Frozen Buffalo Chicken Pizza

We ate lunch at a restaurant and needed only a light snack for supper.

I didn't buy any groceries yesterday and don't plan to buy any today. However, Shane and I didn't eat lunch out yesterday. We had an impromptu date day (and a coupon), so I don't regret it at all.

I've thought of making the crowd pleaser chicken too but I keep putting it off--don't know why! I'll have to give it a try soon. I used to bake chicken legs quite a lot but some how, I've gotten out of the routine. I hope you have a great week. Take care.

You really need to try it! I'm also going to make up that rub mix, minus the oil, and use it on fries, homemade potato chips and/or make a version of BBQ Chex Mix!
