Steak Fingers


It's not just chickens that have "fingers".  Other animals have them, too.

Using Paula Deen's Fried Chicken recipe as my starting point, I made venison fingers.  You could just as easily use beef, pork and of course, chicken, to make these.  I bet it would work with some veggies, too, like strips of zucchini.

I started by cutting a 1-pound venison roast into strips that were about 3/8-inch x 3/8-inch x 3-inches and patting them dry with a paper towel.  I dipped them into a mixture of 1 egg beaten with about 1/4 or 1/3 cup of Louisiana hot sauce.  Then I rolled them in a mixture of a cup of self-rising flour with about a teaspoon of seasoned salt mixed in.  I then deep-fried them in peanut oil, in small batches, for about 4 minutes per batch.

We all loved these just as they were, but they might be good dipped in Ranch, barbecue or other sauces.

I'm not planning on buying anything today, but here are yesterday's totals.  Geez, I really blew it as far as buying only what we need goes.  I bought a whole pork loin, for starters.  Pork was the one meat missing from our freezer, and I have seen it on sale for a while, so I thought I'd better buy some while it was.  I also stocked up on the baking supplies for all those treats I mentioned on December 1.  And of course, the ever present chips, which we can't seem to do without.  However, I am going to try to make more homemade salty snacks this month to take place of some of those chips.

2 dozen farm-fresh eggs, 8 blocks cream cheese, 8 lb. boneless pork loin (will make at least 11 meals for us), 7 bags of chocolate chips, 3 bags (4 lb. each) sugar, 2 lb. bacon, 5 lb. unbleached flour, 5 lb. clementines, 2 boxes stuffing mix, 2 cans pork & beans, 1 can green beans, 1 can evaporated milk, 1 can cranberry sauce (all canned goods and stuffing were in the clearance bin), 1 gal. whole milk, 1 qt. half & half, 1 pt. sour cream, 2 lb. butter, 2 boxes snack crackers, 2 bags tortilla chips, 1 bag potato chips, 1 bag cheese curls, 1 bag pretzels.

I would say that amount is not too bad for all that you got.

As a Southern girl, I just have to add that you can dip just about anything in egg and flour, fry it up and it will be deliciuos!

Frances: I know it's not that much, but it felt like a lot all at once! I did get some great deals, though. The cream cheese was 49¢ for 8 oz.!

And yes, breading and frying does make anything taste good!

Melynda: Unfortunately, I kind of feel about raisins the way you do about game meat. I like them straight out of the box, but usually avoid them cooked in anything.
