Today is the first day of school and I didn't take a picture of Kat. It didn't even cross my mind. I'm never going to win that Memaw of the Year award now. But maybe I'll remember to snap a shot of her after school.

With all the peaches I have in the house, I decided to make this Spiced Peach Salad. I like to call it peach cobbler salad, because that's just what the flavor is like to me. Cool, spicy and tart, it's one of my all-time favorite fruit salads. When you make it, sub in ground cinnamon and ground cloves if you need to, but don't omit the vinegar. It just won't be the same without it. I've made it with canned apricots and apricot Jell-O which was also very good, but I didn't care for it much when I tried it with the suggested orange Jell-O. To make it with fresh peaches, I just use 2 cups of water instead of the syrup/water combination called for in the recipe.In the interest of full disclosure, this recipe comes from Taste of Home Magazine. In fact, this photo is from their website, too. I hope they don't mind me sharing it since I'm linking right back to it and giving them all the credit. Oh yuM! I'm half tempted to call our local fruit market and buy a crate of peaches now...
Well, that sounds like a perfect fit with my 68-cent per pound peaches I bought last night!
Jill: I froze most of them, but I left about a dozen out just to eat. They are so good this year!
McVal: You won't regret it if Iowa peaches are as good as Missouri peaches this year.
Jinmo: Hen House is usually too pricey for me, but once in a while they come through with a great sale like this!
