Monday Morning Chit Chat - Let's Do Lunch Edition

Happy Monday to everyone!  How was your weekend?

I want to start out today by telling all of you that I'm not a liar, liar and my pants are not on fire.  I said last week that I'd post a delicious recipe for vegetarian meatballs, and I had every intention of doing so, but I took an opportunity for a mystery-shopped pizza one night, and I had an extra meal's worth of leftovers another night, so the meatless meatballs were postponed until this week.  They're really good, and I promise to get that post up this week.

The focus of our weekend was more garden and yard work.  Almost all of the veggies have all been planted now.  Most of the transplants we put in on Easter have survived, with the exception of cucumbers.  They grew awfully leggy in their starter pots and just didn't thrive after going into the ground.  We've replanted those...seeds straight into the ground this time.  We still have potatoes to plant, but beyond that we can focus now on planting a few flowers and getting on cleaning up around the outside of the house and improving the condition of our lawn.

Now that the seedlings have been planted, we can also move that bakers' rack back down to the basement.  It's footprint is only 2'x3' or so, but the dining area has felt crowded with it there.

Looking ahead for the week, I'll be enjoying lunch with my friend Janelle today.  I don't think I've seen her in person since she hosted a cookie exchange back in December. I'm looking forward to good food and good conversation with her at First Watch today.

It will be a pretty busy week here.  Kat has swim lessons two afternoons, and on day I hope to spend one day at my parents' house (90 miles away), both visiting and getting starts of some perennial plants from their yard. 

So, that's what my week looks like from a Monday point-of-view.  What does yours look like?

Potatoes were the first thing we planted, they are now strating to show their leaves.
The outlet store is just down the road from Weaver's on the gravel road.
They had a little of everything.

I so wish we were doing a garden this year. I am still debating on getting a few things any way.
Wow--you are going to be busy this week. I wish I could meet some of my blogger friends. Let's see--our week--J has an appointment at the college tomorrow, Wed. is S's birthday and I have a doctors appointment on Thursday. Huh--guess I'll be kind of busy too!!
I've never thought of "meatless" meatballs but I look forward to that post.

DH is out of town part of the week for a conference so I'll be dealing with the pack of hounds & surly teen alone this week. Between that and trying to throw more up on eBay & blogging that's my week!lol

OBQ: We probably should have had our potatoes in already, but they were kind of an afterthought. :)

Sheila: Tomatoes? There are so many things you can do with them to save money and they produce a lot for the amount of space/work they require.

Sluggy: I just got back from my lunch date; I'm full, so I'm definitely feeling no inspiration to cook tonight. Thank goodness there are leftovers from last night. :)
