I'm back from my break, feeling better after having caught up on some things at home. February must have been a record-breaker for us in terms of grocery spending. We spent only $129 of our budgeted $240! That was a very pleasant surprise and due in part to several meal-related mystery shops I was able to do in February. I don't expect to have as many of those shops in March.
Here is my menu plan for this week:
Sunday 3/1 - Burgers (with caramelized onions and a spicy sauce for Shane and I), Fries, Lettuce Salad, Chocolate Pudding
Monday 3/2 - Cajun Shrimp over Rice, Fried Okra, Hushpuppies, Corn
I think we should have had this meal last Tuesday for Mardi Gras!
Tuesday 3/3 - Mr. Goodcents Subs
Our truck is going in the shop on Tuesday morning. The sandwich shop is just a few doors down from the garage, so we'll grab a quick meal there when we pick the truck up Tuesday evening.
Wednesday 3/4 - Grilled Steaks, Salad, Beefy Noodles, Peas
Thursday 3/5 - Loaded Baked Potatoes with Steak, Mixed Berry Galette, Salad
Leftover steak from Wednesday will go on the potatoes. The pie crust for the galette (and Friday night's tartlets) is already made and in the freezer.
Friday 3/6 - Snack Night: Sloppy Joe Tartlets, Hot Spinach Dip with Tortilla Chips, Grapes
Saturday 3/7 - Clean Out The Refrigerator Night

Hey glad to see you're back again.
I almost forgot it was Sunday. I'll have to make a start on my own plan for this week. Your Monday sounds good.
Cajun shrimp is something I usually make without a recipe, but if I'll remember I'll write down what I do and post it later this week. :)
