I'm so busy at work now that I almost wish I'd been laid off! Here's this week's menu, which is about all I have time to post right now. It's heavy on chicken because that's what we had most of in the freezer; I used the Paula Dean recipe to make the chicken strips yesterday. As usual, all the things I made ahead for the week are in bold.
Sunday: Hamburgers and Hot Dogs (leftover from grilling on Saturday), Tater Tots, Salad
Monday: Pan-fried Pork Chops, Fried Potatoes, Asparagus, Corn
Tuesday: Herbed Baked Chicken, Chicken Flavored Rice, Green Beans, Cottage Cheese
Wednesday: Chicken Strips, Tater Tots, Assorted Veggies & Ranch Dressing, Cottage Cheese
Thursday: English Muffins with Sausage, Egg & Cheese, Hash Browns, Broccoli Slaw, Apples with Caramel Dip
Friday: Chicken (Strips) Tortilla Wraps, Tater Tots, Cottage Cheese, Cherry Cobbler
Saturday: Lettuce Salad Topped with Chicken (Strips), Cherry Cobbler -or- if there aren't any strips left, we'll have miscellaneous leftovers out of the freezer
