Weekly Menu - 2/10 thru 2/16

Here is my menu for the week. As of this morning, I had just the Beef In Onion Gravy, the sausage for the soup, and the rolls cooked ahead of time. I've been cooking most of the day, and now I have everything that is highlighted done and in the fridge or freezer use later in the week.

If you're wondering, Herbed Oat Cakes are a meatless "meatball". We all like them as an alternative to spaghetti and meatballs. Even Shane, who is a meat and potatoes guy, loves them. I'll type up the recipe tonight, then post it later this week.

Sunday and Wednesday: Beef In Onion Gravy, Rice, Garlic Green Beans

Monday and Thursday: Apricot Chicken, Savory Rice Pancakes, Corn, Peas

Tuesday and Friday: Cabbage Sausage Soup, Rolls, Pudding and Fruit Parfaits

Saturday: Herbed Oat Cakes, Spaghetti, Sauce, Salad, Garlic Toast

A pan of Triple Layer Peanut Butter Bars for our lunches.
