Weekly Menu - 12/30 thru 1/5

This week we'll be having what has become our traditional New Year's Day meal: Ham Shank Gravy over Homemade Biscuits, Black-Eyed Peas, Cooked Greens (collard, mustard, turnip, etc.), and mashed potatoes. According to Southern and/or Cajun tradition, eating greens and black-eyed peas at the New Year will bring prosperity. Besides that, they just taste good.

Tuesday's meal is the only one that's set; the others will be served in whatever order seems to work best.

Twice: Minestrone with Italian Sausage, Homemade Cheddar-Beer Bread

Once (Tuesday): Ham Shank Gravy, Biscuits, Black-Eyed Peas, Cooked Greens, Mashed Potatoes

Twice: Marinated Bake Chicken, Green Beans with Walnuts, Mashed Potato Bake

Twice:
Cheeseburger Buns*, Buttered Corn, Baked Beans

* These are "kid friendly" homemade rolls filled before baking with a filling of ground beef, cheese, and burger toppings. I'll post the recipe later this week.

A Little Thing To Save Money: The end of the month (and year) is a good time to take stock of what's in your pantry or freezer. Plan to use those foods in upcoming meals so that nothing goes to waste.

A Little Thing To Save Time:
While wait for water to boil or bread to rise, take a few minutes to straighten a kitchen cabinets or two. This will make finding and putting away dishes or groceries much quicker and easier.

I'm looking forward to the cheeseburger roll recipe. It sounds interesting, and I think I may have had something similar once way back when at my great aunts house.
