Banana Rhubarb Pie


Who'd have thought of putting bananas in a rhubarb pie? I wouldn't have, until I saw this recipe at The Rhubarb Compendium. I had everything it called for on hand, so I just had to give it a try.

It's delicious! The bananas make it very sweet and almost tropical. I'm sure I'll be making this pie again!


Here's the recipe, copied straight from The Rhubarb Compendium's site.



Fresh Banana Rhubarb Pie

1/2 pound fresh rhubarb
3 medium bananas
1 cup sugar
1/4 cup orange juice
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 teaspoon nutmeg
1 tablespoon butter
1 9" unbaked double pie crust

Prepare pastry. Slice rhubarb (should yield 3 cups). Slice bananas (should yield 3 cups). Combine ingredients except butter and crust. Spread into pie crust. Dot with butter. Place crust on top. Bake at 450 degrees F. for 15 minutes. Reduce oven temperature to 350 degrees F. and bake for an additional 20 minutes or until browned. From The Central Market Cookbook by Phyllis Good.

I've never had rhubarb. The sound of it scares me. In fact, I don't even know what it looks like... I asked Tom was kind of fruit it was, and he giggled at me!!

*giggling with both of you* Rhubarb scares me too. For some reason it is stuck in my head that it is something yucky that my grandmother fixed along with mince meat pie, beef tongue and pigs feet. Iiiccccckkkkk. After all those things there was no way I was trusting grammy when it came to rhubarb. lol

Sheila, there's a picture of rhubarb at the bottom of the linked page in the post. It looks like red celery. Kind of.

Lisa, look at your comment...I know it's supposed to be an uppercase "I" on the word "iiiccccckkk", but it looks like an "L". Yummmm! ;)

I'm laughing at them as Well!! Ladies!! Rhubarb taste Exactly like fruit! Tangy and tart and when you add sugar, it's FABulous!!!Like Plums?..like that! Try it! Wonderful in tarts or pies!hughugs

Wow, yeah, looked at the photo and would never of thought to call that rhubarb. What a strange looking thing to stick in a pie...
